The Cabernet Sauvignon fruit for this wine was sourced from our King Valley vineyards, processed and bottled on the Paul Bettio King Valley Estate.
The fruit was allowed to ripen for an extra month to encourage shrivelling of the grapes producing high sugar concentration.
The juice was partially fermented and spirit added after the skins were removed from the juice.
Aging in old barrels for an extended period develops complexity through the slow oxidation process, and then selected barrels were blended and lightly filtered to produce a refreshing tawny style with hints of caramel and clean spirit finish.
Suitable with an "after dinner" coffee and even an indulgent chocolate.
Try it with crushed ice in the summer months or poured over vanilla ice cream.
Fabulous as a jus to coat your roast pheasant!
